Temperature Danger Zone
It is the temperature range in which microorganisms grow quickly and sometimes reach levels that can make people ill.
FDA has identified the TDZ to be
41 degrees F to 135 degrees F
In other words: KEEP
HOT FOOD HOT
&
COLD FOOD COLD
Foods that fall b/t 41-135
degrees F can begin to develop microorganisms that can make one ill.
Limit the amount of time foods fall in the TDZ.
Reheating
Reheat leftovers to 165 degrees for a minimum of 15 seconds
